In a large sauté pan, heat oil over medium-high heat. Add the onions and carrots to the pan and sauté for approximately 2 minutes. Add shredded chicken, chicken broth, diced tomatoes (including the juice), Mezclajete® Especial Salsa Picante Hot Sauce, frozen corn and oregano to the pan. Stir to incorporate all the ingredients. Lower heat to simmer and cover.
Cook for approximately 20 minutes. Divide soup into 4 bowls and garnish with tortilla strips, chopped cilantro, and sliced green onions. Offer lime wedges and extra Mezclajete® Especial Salsa Picante Hot Sauce on the side. Makes 4 servings.
*Note: You can substitute tortilla chips for the tortilla strips. Lightly break up the tortilla chips in the bottom of your bowl, ladle the soup on top of the chips and garnish with toppings.
