Mezclajeté® Street Corn Dip

We love Street Corn but don't like the messy hands. This dip is the best of both world, it tastes great and our hands are clean.
 2 cups Corn (or kernels from 2 ears of fresh corn)
 1 tbs. Butter
 2 tbs. Mayonnaise
 1 ½ tbs. Mezclajeté Especial Salsa Picante
 2 tbs. Cotija Cheese, crumbled (divided)
 1 tbs. coarsely chopped Cilantro

Melt butter in a medium non-stick sauté pan. Add corn and sauté for about 1-2 minutes or until corn is heated through. Turn heat off and stir in Mayonnaise, Mezclajeté Especial and 1 tbs. of Cotija Cheese into the corn. Spoon corn dip into a bowl and garnish with Cilantro and remaining 1 tbs. of Cotija Cheese. Serve immediately. Makes 2-3 servings.

Option: Add more Mezclajeté Especial for a spicier corn dip.

Great with toast points, as a side dish, on nachos or in a chicken quesadilla.
